Yellow Whoopie Pies |
INGREDIENTS |
Cake:
3/4 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sour milk
Filling:
3/4 cup butter
1 2/3 cups confectioners sugar
1/2 of a 7 1/2 oz jar Marshmallow Fluff
1/2 teaspoon vanilla

METHOD |
Cake:
Beat shortening, sugar, eggs and vanilla until fluffy.
Sift together flour, baking soda, baking powder and salt. Add to shortening mixture alternately with 1 cup sour milk.
Drop by large tablespoons onto greased cookie sheet or sheet lined with foil.
Bake in a preheated 375F oven for:
- 12 minutes for small cookies
- 15 minutes for large cookies
Filling:
Mix butter, marshmallow, together until creamy, add vanilla and then confectioners sugar. Beat well.

NOTE |
To make sour milk: 1 tablespoon vinegar and add milk to measure 1 cup, let stand 5 minutes.
Sour milk can be replaced by buttermilk.
1/2 of a 7 1/2 oz jar Marshmallow Fluff is equivalent to 1 cup of Fluff.
I like to make 1 1/2 batches of filling per recipe.
This recipe can be used to make Half-Moon cookies. Frost with white and chocolate frosting. |
