Turkey Pie |
INGREDIENTS |
2 9" pie crusts
10 oz frozen mixed vegetables
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
1 3/4 cup chicken broth
2/3 cup milk
2 1/2 - 3 cup cut-up, cooked turkey
2 medium potatoes

METHOD |
1. Peel, cube and cook potatoes in boiling water. Slightly under cook the potatoes.
2. Rinse frozen vegetables to separate, then drain.
3. Heat butter in 2 qt saucepan over medium heat until melted.
4. Stir in flour, onion, salt and pepper. Cook stirring constantly, until mixture is bubbly.
5. Remove from heat and stir in broth and milk.
6. Heat to boiling, string constantly. Boil and stir 1 minute.
7. Stir in turkey, vegetables and potatoes.
8. Fill pie crust, then cover with the second crust.
9. Freeze or bake at 425 for around 35 minutes or until golden. |
NOTE |
If cooking frozen pie, bake at 425 for around 75-90 minutes, until golden. |
