Caramel Bars

INGREDIENTS
3/4 C. butter, melted
1 C. all-purpose flour
1 C. quick oats
3/4 C. packed brown sugar
1 tsp. baking soda
32 caramels
3 T. butter
3 T. cream
1 6oz. pkg chocolate chips
1/2 C. chopped nuts (optional)

METHOD
Preheat oven to 350. In a bowl, combine melted butter, oatmeal, flour, brown sugar, and baking soda and mix well. Put 3/4 of the mixture into a 13x9x2 pan, pressing evenly over the bottom of the pan. Bake 10 minutes.

In a saucepan, combine the caramels, butter, and cream and cook over low heat, stirring constantly until caramels have melted.

Pour the caramel mixture over the crust and sprinkle with the chocolate chips and nuts.

Top with the remaining butter/oatmeal mixture. Bake for about 15 minutes more.

Cool and cut into bars.

NOTE
I use a glass pan for this recipe so Im not sure if the bake times might be different with a metal pan.

It helps not to let the caramel mixture get on the very edge of the bars when you’re pouring it because it makes them harder to cut afterwards.
