Chocolate Chip Cookie Sandwich

INGREDIENTS
4 sticks butter -- softened
1 1/4 cups light brown sugar
1 1/4 cups sugar
4 each egg
1 1/2 teaspoons vanilla extract
4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
4 cups chocolate chips

For the ganache:
16 ounces dark chocolate
12 fluid ounces heavy cream

Your favorite Frosting

Assorted chocolate -- grated

METHOD
Chocolate chip cookies
Chop chocolate into small pieces if needed.
1 cup each Bittersweet chocolate, milk, dark and white chocolate

In a 5 qt mixing machine with a paddle attachment, combine the sugars and the butter.

Mix the sugar and butter mixture for 5 minutes on medium speed.

On slow speed add the eggs and vanilla extract.

Mix the mixture for 5 minutes or until light and fluffy.

Add sifted dry ingredients and mix until just combined. Do not over mix. About 1 minute.

Add the chocolate chips and mix until just combined.

Use a tablespoon or a medium ice cream scoop and place about 2 tablespoons of dough onto a parchment paper lined baking sheet.

Bake at 325 F degrees until light golden brown. About 8 to 10 minutes.
Cool on a wire baking rack.

Place a small amount of your favorite frosting between two cookies

Prepare ganache:

Heat heavy cream up to a boil, pour over cold chocolate and stir to until smooth.

Allow to cool about 5 minutes and spoon the fluid ganache over the sandwiches cookies.

Sprinkle with grated chocolate and allow to cool completely about 15 minutes.

NOTE
Try using 1 cup each of:
Milk chocolate chips
Bittersweet chocolate chips
Semisweet chocolate chips
White chocolate chips
